There are many different types of sushi, but the types Americans are probably most familiar with are the hand-rolls, maki rolls (basically a hand-roll cut into individual bites, i.e. California rolls, etc.), and nigiri sushi (little “fingers” of rice topped with a filet of raw or cooked fish or shellfish.) If you have yet to try sushi at all, a good starting point is a California roll, building up to enjoying the raw filets of fish all by themselves.
