Grilled Artichokes with Garlic Butter
Who said healthy couldn't be delicious? Artichokes are a lot easier to prepare than you think. You just have to know how to eat 'em. Yummy!
Bring a pot of water to a boil. Prepare artichokes by cutting off the bottom of the stem, trip the top and cut in half. Put in the water cut side down for 10 minutes (the artichokes will float to the top). Turn over for and boil for additional 5 minutes. Drain for a couple of minutes on a paper towel. Brush with olive oil (use garlic oil for extra flavor) and add salt and pepper to taste.
Heat grill. Please artichokes on the grill cut side down for 3-5 minutes. Turn over for additional 3 minutes. Serve with garlic butter for dipping.
*To make the garlic butter, take crushed garlic and add to 1 tbsp of butter, heat until melted. Add some garlic powder for extra garlicy flavor!
**It you do not know how to eat an artichoke, it's very easy. I usually start with the leaves on the outside. Remove the leaf and you can dip the top into the butter. The inside and bottom are edible. Slide the inside of the artichoke on your teeth and eat the bottom. Yummy! When all the leaves are gone, the heart is the best part and completely edible. Enjoy!
