Baked Eggplant Fully Loaded
Delicious Baked Eggplant, topped with Chedder, Mozarella, Butter, and Minced Garlic.
To make this, first grill the eggplant whole till it becomes squooshy. Then slice an opening to fill it up with cheeses and throw it in the oven till the cheese becomes nice and crusty on top.
I got my ingrediants at Mollie Stone's in Palo Alto.
