Trio of Bruschetta
A buddy and I wanted to get creative for a wine tasting so we created a trio of very different Bruschetta.
The First is a classic. Cold smoked topped with a creamy dill, yogurt and cucumber sauce. We added enough lemon to the sauce so it helped cut through the creaminess of the yogurt and also so it could stand up to the smokiness of the salmon.
The second was a little concoction we came up with. We are huge fans of homemade pickles. This one is is lightly picked red onions and cucumbers. The cucumbers were nice and crisp with the spicy red onions. We pickled them in rice wine vinegar, dill, and sugar. Crisp and clean, not overly tart and nice and sweet.
The third was a twist on traditional bruschetta. Vine ripened Roma tomatoes, roasted portabella mushrooms, minced garlic and red onions, and really good balsamic and parmesan. This one was the hit of the party.
