Grilled red cabbage coleslaw
An advanced version of a coleslaw salad. You gonna love this one!
Cut the cabbage into quarters and remove the core. Brush the cabbage quarters with olive oil and directly grill on medium heat for about 20-22 minutes, turning once or twice, until nicely charred. Remove from grill and let cool to a room temperature.
Mix the sauce ingredients in a non-reactive bowl - mayonnaise, cider vinegar, chipotle paste and the dates honey.
When cabbage is cool enough to handle, roughly chop it and mix well with the sauce.
