I have yet to enjoy any dish made using Geoduck. This time, I tried your Geoduck sashimi and it was marvelous. The Geoduck is sweet and tender with just a hint of the ocean in the background. Outstanding! Geoduck is a bit hard to find, but when you can get it and serve it this way, its' terrific!
I was a little apprehensive about eating raw fish, but the way you have the salmon laid out on the Salmon Sushi Platter is very good. A squeeze of lemon and a few capers and you're good to go!
