Broiled fish is not just real good it really is good for you. Broiling is much healthier than frying and the delicate taste of the fish isn't masked by the taste of the frying oil.
Any kind of broiled white or pink fish is allowed. Dover sole, when you can get it , is outstanding. Fresh salmon or halibut are good choices. Shark is exotic and tasty.
The fish must be broiled or grilled...no pan frying. Garnish with any appropriate item that complements the fish. Lemon wedges are very traditional.
